So, when you eat foods like potatoes, bread, and rice, you’re basically eating sugar. How is that possible? I hear you ask. Well, these foods contain starch. Starch is basically blocks of glucose glued together one after another like

beads on a string. And glucose is a type of sugar. In your stomach, this glue holding the string of glucose together gets dissolved. So now the single blocks of glucose are free. The huge starch molecule you started out with was too big to pass out of your intestines and into your blood. But these much smaller single blocks of glucose can pass into your blood very easily. And that glucose in your blood from the food that you ate is what you’re measuring when you check your blood sugar. So when you talk about high

blood sugar, it would be more accurate to say that you have high blood glucose. So let’s continue with our journey. When your blood glucose, that’s your blood sugar, rises above a certain level, your pancreas releases a hormone called insulin. And your body uses hormones to send messages around your body. This insulin travels to every part of your body through your blood and it goes around knocking on doors telling each of your cells there’s too much glucose in the blood. This is dangerous. I need you

to open up and take some out so that the amount in the blood can come down. If you’re healthy and everything’s working normally, when insulin knocks, your cells listen. They open up and take some of that sugar, that glucose out of your blood and into the cells, and your blood sugar comes down. as we keep on overeing or eating the wrong types of food or not using our muscles and you know other things over time these cells become stuffed and uncomfortable. Now, when you eat, your blood glucose goes up. Insulin comes

along and knocks on the door, telling your cells to open up and remove some of the sugar from the blood. And they say, “No, thank you. We’re stuffed. We can’t take any more glucose.” And they refuse to open their doors. And the sugar in your blood stays high. So, this is where we start talking about insulin resistance. If insulin knocks on the door, talks to your cells and they listen and open up, that means that your cells are responding to insulin. They are sensitive to insulin.

But if insulin knocks and the cells don’t listen and they don’t open up, that means that they become stubborn. They become resistant to insulin. So when your pancreas sees that your blood sugar is still high, what does it do? It starts working over time. It produces and releases more insulin so it can force these cells to open up and remove the sugar from your blood and so your blood sugar comes back down to normal. This works for a while, but then the cells are so uncomfortable that they

become stubborn again and they’re actually trying to protect themselves from all this glucose. When your pancreas sees this and it produces no more insulin and this cycle continues until your pancreas becomes exhausted, it just can’t produce enough insulin to force these cells to remove the sugar from your blood. So, going back to the kinds of food that you should be eating to lower your blood sugar, that’s your blood glucose. We’re looking for foods that have the least amount of starch and other types of sugar, what we call carbohydrates or carbs for short. come down, and your body starts to heal. So, the foods I’m going to talk about are very low in carbs. And if you try to eat these foods most of the time, you’ll definitely see your blood glucose coming down. First of all, let’s talk about meat. Meat doesn’t have any carbs. You can choose any type of meats that you like. Um, beef, lamb, chicken, turkey, duck. Some people eat donkeys, horses, snakes, lizards, it’s all meat. Don’t fall into the trap of um looking for lean meat.

That’s meat without any fat. When you eat the fat that comes naturally with the meat, it keeps you satisfied, so you won’t feel hungry all the time. Also, the fattier cuts may be cheaper in some places. Most seafood is very low in carbohydrates and won’t raise your blood sugar. Um, but avoid the processed forms like crab sticks and other types that are covered in breadcrumbs and other

coatings because they will tend to have more carbs, which is what you’re trying to avoid. You can also eat um scallops and muscles, but not too much. They naturally have more carbohydrates than fish. If you have gouts, maybe be careful with oysters because eating a lot may cause your gouts to flare up in May. organ meats. So, we’re talking liver, kidney, brains. You know, these parts may contain a bit more in the way of carbohydrates than than some other types of meat like the muscle, but it’s still not much. If you don’t like organ meats, don’t worry. Just like with eggs, you may have heard that uh you should be eating low-fat everything. You should be eating chicken breasts, uh drinking low-fat milk, eating lean beef, no more than five eggs a week, all to avoid eating too much fat. only get fats soluble vitamins like vitamins A, D, E, and K from fat. So, you need to eat fat. But there are three things that you need to watch out for when it comes to fats and oils in your diet. First of all, eat fat that comes naturally in the food that you’re eating. So, uh, for example, eat the skin of the chicken, eat your marbled meat, eat your eggs with the yolks, eat, um, avocado, which naturally contains healthy oil. Eat oily fish like sardines and mackerel and salmon if you can afford that.

Uh, two, you don’t need to be pouring extra oil on your food or slathering everything with butter because the chances are that you’ll just end up making yourself fatter. And then the third thing is that um there are oils that you should not be eating like um soybean oil, flax seed oil, canola oil, sunflower oil, corn oil. some people. So maybe don’t overdo it. If you eat yogurt, stick to Greek yog Greek yogurt because it has less sugar. Fruit is basically nature’s candy. Almost all fruit contains sugar. Some a lot more than others. Olives and avocados have very little sugar. Okay. The next best fruit after these would be berries like strawberries, raspberries, and blackberries. The problem with nuts is that they can be quite fattening if you eat too much. And this is yet another food that can be addictive and you may find that once you start eating nuts, you can’t stop. So, if that’s you, avoid them. And then there are some nuts like um cashews and pistachios that are quite high in carbohydrates. So it’s better to avoid them altogether.

We can’t talk about food that’s low in sugar without talking about vegetables. If you want to make things really simple for yourself, stick to leafy vegetables. And if you want to add a little bit more variety, you can add other vegetables that grow above the ground like um cucumbers, peppers, tomatoes, which are technically fruits,
